Belgian Waffle Recipe
Makes: 4 batches
1 ½ cups milk, warm
¼ cup caster sugar
1 teaspoon dry yeast
2 eggs, separated
75g butter, melted
2 cups plain flour
1 teaspoon salt
1. In a small bowl combine ¼ cup warm milk,
sugar and yeast. Set aside until foamy.
2. In a large bowl combine yeast mixture,
remaining milk, egg yolks and butter.
3. Using an electric mixer whisk egg whites
until soft peaks form.
4. Add flour and salt to yeast mixture in three
batches, stirring to combine.
5. Gently fold egg whites into batter until
combined. Set aside for an hour.
6. Preheat waffle maker. Lightly coat plates
with oil spray.
7. Add ¾ cup of batter to waffle maker.
Ensure batter fills all grooves. Close lid.
8. Cook for 5-6 minutes or until golden and
crisp. Repeat with remaining batter.
Chocolate Waffles
Makes: 4 batches
100g dark chocolate, chopped
60g butter, chopped
2 cups milk
1 ½ teaspoons vanilla essence
2 eggs
1 ½ cups plain flour
¾ cup cocoa powder
½ cup caster sugar
2 teaspoons baking powder
1 teaspoon salt
1. Preheat waffle maker. Lightly coat plates
with oil spray.
2. In a small bowl combine chocolate and
butter. Microwave for 30 seconds or until
chocolate is beginning to melt. Stir until a
smooth paste.
3. In a separate bowl combine milk, vanilla
and eggs. Whisk until combined.
4. Add remaining ingredients, including
chocolate, to the bowl and stir until just
combined.
5. Add ¾ cup of batter to waffle maker.
Ensure batter fills all grooves. Close lid.
6. Cook for 4 - 5 minutes or until golden and
crisp. Repeat with remaining batter.
