5.
Safety and food hygiene manual
5.1
General remarks
The analysis of dangers as described in para 5.2, 5.3, 5.4, 5.5 and 5.7 is
based on:
1) an understanding of the normal operating conditions of the machine, spe-
cifically those specified in the operations manual;
on the assumption that the machine will be used for the production and coo-
king of products for bakeries;
2) and the assumption that personnel are properly trained and fully informed
of dangers in the workplace;
3) and unauthorized and untrained personnel cannot gain access to the work-
place.
5.2
Dangers form mechanical parts and residual risks
In compliance with European Community Directive no. 98/37/CEE other
risks are listed below, with an analysis of the risk and measures which can
be taken to reduce the danger.
5.2.1
Hazard zone 1
The entire area shown on the lay-out is protected by a shock-proof accident-
prevention guard preventing the arms and hands from reaching the kneading
tool. The tool functions only if the guard is perfectly in place. There distance
between the upper edge of the tank and the lowered guard must be no more
than 25 mm. The guard is connected to micro switches which are normally
closed (NC). Any attempt to raise the guard triggers the switches which shut
down the tool. The micro switches shut down all machine motors preventing
contact with moving parts and hence the danger of injury.
Risk of fingers being caught up, dragged and crushed between the
tool and tank and/or tool and column.
