9.1 Vegetarian minestrone
For 4 people
Ingredients:
1.8 litres vegetable stock (warm)
800 grams (2 tins) chopped tomatoes
425 grams (1 tin) kidney beans
2 onions
2 sticks of celery
3 carrots
200 g baby green beans from a jar or tine
1 courgette
2 cloves garlic
1/2 bunch fresh parsley
2 teaspoons dried oregano
1 teaspoon salt
1/2 teaspoon dried thyme
Freshly ground black pepper
75 g elbow pasta
30 g freshly grated Parmesan
Method:
Wash the celery, carrots and courgette and dice finely. Peel the onions and garlic and chop finely.
Add the vegetable stock, tomatoes, kidney beans, green beans and the prepared ingredients into the
ceramic pan (4). Then, add the dried herbs to the minestrone and season with salt and pepper to taste.
If you are using fresh green beans, pre-cook them for around 20 minutes before adding
them to the slow cooker.
Fresh herbs lose their flavour after a long cooking time, so only add the fresh parsley at
the end.
