Instructions
For Peanut Sauce
Put the peanuts and anchovies (with some oil) on a piece
of grease proof paper. Put it in the microwave oven and
operate a Microwave 60 % for 2 mins. After cooking, take
out and shuffle the peanut and anchovies. Put it in the
microwave oven again and operate a Microwave 60 %
for 1 min 30 sec. After cooking, take out keep cool and
press with hands to remove peanut skin. Put in dry mill
and grind into coarse size. Put aside.
Mix oil, dry chilli, onion, lemongrass and galangal in the
other micrwave safe bowl. Put it in the microwave oven
and operate a Microwave 100 % for 3 mins.
After cooking, take out and blend into smooth paste with
enough water and tamarind juice.
Using the same casserole, add roasted peanuts, blended
ingredients, palm sugar, tomato paste, water and sugar.
Stir well into a smooth sauce.
Put it in the microwave oven and operate a Microwave
100 % for 8 mins. After cooking, take out, stir well.
For Marinade
Blend all ingredient into a smooth paste. Add boneless
chicken to the paste and marinade for 2 hrs. Then preak
meat onto skewers.
For Complete Dish
Put it in the microwave oven. Select this menu in
autocook and press a
START
button. When the beeps,
take out it and turn the food over. brush with oil and
water solution using lemongrass. Put it in the microwave
oven and press a
START
button again. After cooking,
brush with oil and water solution using lemongrass
again. Serve with peanut sauce, cucumber and onion.

Boneless Chicken cut dice 300 g.
For Marinade
Lemongrass slice (3 ea) 40 g, Shallots
(5 ea) 30 g, Palm sugar 2 tbsp. (Grated),
Sugar 1 tbsp., Turmeric powder ½ tsp.,
Salt 1 tsp., Oil 2 tbsp., Water ½ cup.
For Peanut Sauce
Peanut - roasted using microwave
150 g, Anchovies - roasted using
microwave 50 g, Oil 2 tbsp., Dried Chilli
- cut 1 inch 12 ea, Onion (cut 4 ea) 60 g,
Lemongrass slice (2 ea) 28 g, Galangal
slice (1 inch) 18 g, Tamarind Paste make
into 30 g juice 1 tbsp., Palm Sugar 60
g (Grated), Tomato paste 30 g, Salt and
Sugar to taste, Water 150 g.
