INFORMATION ABOUT 

THE APPLIANCE

GENERAL PRECAUTIONS

·The meat slicer must only be used by qualified

staff who are familiar with the safety rules in
this manual.

·If a staff rota system is necessary, leave

enough time for preparation.

·Although the appliance has safety devices

fitted at the dangerous spots, avoid putting
your hands near the blade and moving parts. 

·Before performing any cleaning or maintenance

work, unplug the appliance from the mains.

·When performing maintenance or cleaning

work in the meat slicer (the protection covers
need to be removed to do so), carefully check
for waste residue.

·During maintenance or cleaning, concentrate

on the task at hand.

·Do not use corrosive or flammable substances

to clean the meat slicer. Use neutral
disinfectants that are specially designed for
food equipment.

·Closely follow the instructions in chapter

“Ordinary cleaning”.

·Do not clean the meat slicer using high-

pressure water jets and do not immerse it in
water or other liquids.

·Regularly check the power cable: a worn or

damaged cable represents a serious electrical
hazard.

·Never pull on the meat slicer cable or the slicer

itself to unplug it.

·Do not use the meat slicer if the blade’s outer

diameter has reduced by 10 mm due to
repeated sharpening.

·If the meat slicer shows signs of malfunctioning,

you are advised against using or repairing it and
to contact the “Support Centre”.

·Do not use the meat slicer on frozen products,

meat and fish containing bones and, in
general, any non-food products.

·Do not leave the meat slicer exposed to

harmful atmospheric agents such as sun, rain,
dew, ice and humidity.

·Unplug the meat slicer from the mains while it

is not being used.

·If the slicer has not been used for a long time,

take it to a support centre to be checked before
you use it again.

CAUTION: never slice products near the end
without using the meat press plate or adopt
positions that put you in direct contact with
the blade.

SAFETY DEVICES FITTED IN THE
APPLIANCE

MECHANICAL SAFETY DEVICES

As far as mechanical safety devices are
concerned, the meat slicer described in this
manual complies with Machinery Directive
2006/42/EC and with regulation EN 1974 (meat
slicers, health and safety features).

Safety is achieved with:
·a blade cover

·a fixed, immovable blade cover ring

attached to the blade 

·a hood
·a meat press arm, not fully folding
·a handle for the meat press arm 
·a hand guard on the plate
·a carriage that can only be removed with the

thickness regulator plane in the “0” position, at
the end of the range and on the operator’s side.

N. B.:

in accordance with section 1.7.2

“Residual risk warnings” in attachment 1

of Machinery Directive 2006/42/EC, the blade
cover ring in the blade sharpening area does
not completely prevent the risk of cutting
yourself. To reduce the severity of the risk, the
ring has been made in fulfilment of European
regulation EN 1974.

The appliance is fitted with electrical safety
devices, in accordance with:

GENERAL DESCRIPTION

Our company has designed and manufactured
the range of EC professional automatic meat
slicers with the following guarantees in mind:
maximum safety during use, cleaning and
maintenance;
·maximum hygiene, achieved by carefully

selecting the materials that touch the food and
eliminating angles in the part of the meat slicer
that comes into contact with the product,
allowing the appliance to be fully cleaned and
dismantled easily.

·maximum slicing precision due to the cam

system;

·maximum slicing capacity from 0 to 14 mm;
·robust, stable components;
·complete silence due to the drive belt;
·low noise emission (less than 70 dB);
·user-friendliness.

MANUFACTURING FEATURES

The professional meat slicers in this range are
made from an aluminium alloy that guarantees
contact with the food (hygiene), avoids acids and
salts from sticking to it, and prevents rusting.
The blade, made from tempered steel, ensures a
clean and precise cut. Most of the components are:
·ABS
·Lexan
·AISI 430 or 304 steel

APPLIANCE DELIVERY

INSPECTING THE PACKAGING
UPON DELIVERY

Upon delivery, open the package, provided that
there are no external damages, to check that no
part is missing. If you notice signs of
manhandling, theft or the package has been
dropped, notify the courier and submit a
detailed report about the appliance’s damages
within 3 days following delivery.

DISPOSAL OF THE PACKAGING

The packaging elements (cardboard, wooden
pallet (if any), protective nylon cover and anti-
theft devices) must be disposed of separately in
accordance with legislation in force in the
country in question.

INSTALLATION

APPLIANCE INSTALLATION

When choosing a surface on which to install the
meat slicer, bear in mind the measurements
specified in the technical table (depending on
the model). The surface must be level, dry,
smooth, sturdy, stable and raised 80 cm above
the floor.

ELECTRICAL CONNECTION

MEAT SLICER WITH SINGLE-PHASE MOTOR

The meat slicer comes with a 3x1 mm2 and 1.5
m-long power cable, and a “SHUKO” plug. It
must be connected to a socket in accordance
with EEC regulations. Connect the meat slicer
to a 230 volt and 50 Hz mains, inserting a 10A,
IDn = 0.03 A circuit breaker.
At this stage make sure that the earthing is
working properly. 
Also check that the current type specified on the
nameplate (Figure 5) is in keeping with the power
supply voltage (volts) and frequency (Hz).

MEAT SLICER WITH THREE-PHASE MOTOR

The meat slicer is fitted with a 4x1 mm2 and 1.5
m-long power cable. Connect the meat slicer to
the 400 V and 50 Hz mains, using a CEI plug
(red), inserting a 10A, IDn = 0.03 A circuit breaker.
At this stage make sure that the earthing is
working properly. 
Also check that the current type specified on the
nameplate (Figure 5) is in keeping with the power
supply voltage (volts) and frequency (Hz).
Before you make the final connection to the
three-phase power supply, check the blade
rotation direction by quickly pressing the green
button (4) (see Fig. 8) and then stop it by
