This manual describes the installation, ope-
ration and maintenance of the CR-142 / 143
combined cutter-grater machines. The
model reference number and specifications
are stated on the specifications plate fixed to
the machine.
This apparatus has been designed and
manufactured in accordance with the follo-
wing standards:
European directives and standards
Machine Directive 98/37 EEC. Machine
Directive.
European standards:
EN 1672-2. Food processing machinery.
Basic concepts. Part 2: Hygiene require-
ments.
prEN 12851. Food processing machinery,
catering attachments for machines having an
auxiliary drive hub. Safety and hygiene requi-
rements.
Health:
Directive 89/109/CEE. Directive concerning
materials and objects for use in contact with
foodstuffs.
Directive 90/128/CEE. Directive concerning
plastic materials and objects for use in con-
tact with foodstuffs.
prEN 601-1995. Aluminium and aluminium
alloys. Castings, chemical composition of
castings for use in contact with foodstuffs.
INSTALLATION
Follow the instructions in this manual to
obtain the best performance and keep the
machine in good condition.
Fitting the CR-142 / 143 to SAMMIC com-
bined machines.
The CR-142 / 143 is an accessory for
Sammic combined machines. To fit the
accessory to the machines, proceed as
follows (FIG. 1):
Ensure that the combined machine is
swit-
ched off.
Unscrew the knob (A) to open the accessory
port (B) (Fig.1).
Place the CR-142 / 143 accessory in the
accessory port, inserting the shaft of the CR-
142 / 143(C) into the accessory port shaft
(D).
Turn the CR-142 / 143 accessory until it
locks with the accessory port pin (E).
Lock the accessory port (B) by screwing in the
knob (A).
Fitting cutting parts to the CR-142 / 143
Fit the cutting accessories to the CR-142 /
143 by taking the following steps in order
(FIG. 1 and FIG. 2):
Ensure that the combined machine is
swit-
ched off.
Use the key (F) to unscrew the safety screw
(G) (turning the key anti-clockwise).
Open the lid of the CR-142 / 143 (H).
Fit the ejector disc (I) (FIG 2).
Where necessary, fit the dicing grid in posi-
tion (J).
Fit the cutting disc (K).
Close the lid of the CR-142 / 143 (H), scre-
wing down the safety screw (G) with the key
(F).
Operating the CR-142 / 143
Pull up the handle (L) put the product to be
cutted or grated inside (M) and then press
it with the handle (L)
Note: The maximum cutting height of the
disc used must be 8.
Removing cutting accessories
To remove the cutting accessories from the
CR-142 / 143, proceed as follows:
Ensure that the combined machine is s
wit-
ched off.
Remove the cutting disc by rotating it anti-
clockwise while pulling away from the
machine (hold the outer part of the disc,
not the blade)
Remove the dicing grid (if fitted) and the
ejector disc.
Storing equipment
For correct and easy storage of discs and
dicing grids, the Sammic stock list includes
racks that can be joined together to make a
unit that can be hung or placed on a table
or shelf. These supports protect the equip-
ment against any blows.
Using the racks or the disc packaging
avoids risk of cutting.
Using discs and dicing grids
Discs FC-1 and FC-2 for cutting chips.
Discs FC-3 and FC-6 for obtaining 3 or 6
mm slices of potato, carrot, beetroot, cau-
liflower, cucumber, courgette, onion,
radish, etc.
Discs FCC-2, FCC-3 and FCC-5 with a cur-
ved blade, for slicing soft products: toma-
to, orange, lemon, banana, apple, etc.
Discs FR grater-type, from 2 to 7 mm, for
peeling vegetables and grating cheese,
bread, walnuts, almonds, etc.
Discs FCE-2 and FCE-4 for cutting straw
and matchstick potatoes, strips of carrot,
celery, beetroot, etc., Julienne discs.
Discs FR-1 and FR-8 for grating bread,
cheese, chocolate, etc.
By combining the FC-6, FC-8 and FC-10
cutting discs with the FF-6, FF-8 and FF-10
dicing grids we can obtain french fries.
By combining discs FC-3 to FC-8 with the
FM-8, FM-10 and FM-20 dicing grids we
can obtain potato for omelettes, diced
vegetables for macedoine and Russian
salad, etc.
MAINTENANCE
IMPORTANT POINTS
NEVER
insert your hand or any utensil into
the cutter inlets or outlets. In this way, you
will avoid accidents and damage to the bla-
des.
Disconnect the combined machine from the
mains power supply before cleaning, chec-
king or repairing the CR-142 / 143 cutter-
grater.
The blades and dicing grids are sharp.
Handle them with care when cleaning.
CLEANING
Disconnect the combined machine from the
mains power supply before cleaning.
All parts of the cutter-grater that are in
contact with foodstuffs must be cleaned
with hot water and a foodstuff-approved
detergent immediately after use. Then rinse
with abundant hot water and disinfect with
a soft cloth soaked in ethyl alcohol (90 º).
The outside of the machine
MUST NOT
be
cleaned using a direct water jet. Use a
damp cloth and any standard detergent.
