ARGENTINE GRILLING INSTRUCTIONS
Before lighting a fire, c
heck to ensure that lifting system and ratchet locking device of cooking grate are functioning
properly, that collar fittings and flywheel are firmly anchored to the rotation shaft and those assemblies of the
fire-grate, ash pan, cooking grate and basting pan have been completed as in assembling upfront.
Raise the cooking grates by turning the flywheel front to back. The grates will be locked at any desired height. To
lower the grates, grasp the flywheel with your right hand, while disengaging the ratchet latch with your left hand; then
slowly turn the flywheel back to front.
Coals are not necessary for cooking on this grill as it is designed for flame cooking. You may begin as soon as you
light the fire, making sure, however, that the cooking grate is at the maximum height to avoid burning the food.
Arrange the fire evenly in the charcoal grate, toward the center rather than only the back.
Before placing your food
, make sure the cooking grates are seated correctly with the open end of the channels
facing forward. Affix the basting pans and add the ingredients of your choice, starting with a splash of base such as
extra virgin olive oil, butter or wine. Liberally and regularly baste your food using a high-quality natural bristle brush.
If one or more cooking grates become blocked with food pieces while cooking is in progress, free them with long
handle spatula.
Making best use of the V-groove Grate System
Make sure the upper inverted V-bar of the V-groove
Grate (7) is correctly

the Cooking Grate
Support (12) as shown.
The lower inverted V-bar of the V-groove Grate (7)
MUST
be tightly bounded by the lower frame of the Cooking
Grate Support (12) as shown.
Because you can regulate heat and convert juices into basting sauces, opportunities present themselves in ways
you may not associate with grilling. For example, we recommend:

Whole poultry split and cooked flat, like steaks
l
Whole fish butterflied and cooked without turning
l
Vegetables and fruits
– their sweetness is complemented by hardwood flavor
