*The scale is based on the solubility of carbondioxide in beer with an original wort of 12° Plato
and an apparent attenuation of 80% assuming that the atmospheric pressure during the
determination is 760mm Hg.
If the composition of the sample deviates from the above standard, the Haffmans CO
2
formula
should be adjusted for the constants A, C and D.
Example using beer
In beer the solubility of CO
2
per 3° Plato changes by about 1%. This means that the solubility of
CO
2
in beer with an original wort of 9° Plato is about 3% lower is than the solubility of CO
2
in
water. For beer with an original wort of 12° Plato, the solubility of CO
2
is 4% lower.
Example using soft drinks
In soft drinks the solubility of CO
2
per Brix changes by about 1%.
This means that the solubility of CO
2
in soft drinks with a sugar content of 8 Brix is about 8%
lower than the solubility of CO
2
in water. For soft drinks with a sugar content of 10 Brix, the
solubility of CO
2
is about
10% lower.
