Ingredients
1 large onion, finely chopped
4 sticks of celery, finely chopped
15 ml (1tbsp) olive oil
350g (12oz) sliced mushrooms
300 ml (

pt) water
5 ml (1tsp) Marmite®
3 ml (
½
tsp) thyme
Pinch ground bay leaf
150 ml (
¼
pt) sour cream

Dish: 3 litre (6 pt) dish
Place the onion and celery in dish with the oil. Place on
base of oven and cook on
MEDIUM MICROWAVE
for 5
mins. Add all other ingredients, except the cream, mix
well and cook on
MEDIUM MICROWAVE
for 10 mins
stirring halfway. When cooked stir in the sour cream and
serve.
Mushroom Stroganoff

Ingredients
175g (6 oz) quinoa
600ml (1pt) boiling water
10 cherry tomatoes on the vine
halved
¼ cucumber diced
3 spring onions finely chopped
Juice of half a lemon
30 ml (2 tbsp) olive oil
60 ml (4tbsp) fresh mint torn
60 ml (4tbsp) fresh coriander
chopped
60 ml (4tbsp) fresh parsley chopped
Salt and pepper
Serves 4
Dish: large bowl
Put the quinoa and boiling water into the bowl. Cover
with pierced cling film, place on base of oven and cook
on
HIGH MICROWAVE
for 15 mins. Stand and allow to
cool. Drain if necessary.
Add all other ingredients and season to taste.
