During busy periods, a systematic approach should be utilized in loading the griddle. Load the entire
section from the front to rear and continue to the next section if necessary.
Turn the product and continue cooking until it has reached its desired degree of doneness.
Remove the product from the griddle.
When reloading the griddle, first use the griddle surface on which a previous load was not placed. This will
insure the proper griddle temperature.
BROILER OPERATION
CAUTION
WHILE COOKING, THE BROILER MUST BE MONITORED AT ALL TIMES. DO NOT LEAVE
THE BROILER UNATTENDED WHILE COOKING.
The broiler hood stops in two positions, the closed position for cooking and the open position for griddle
loading, cleaning, or griddle only use.
No thermostats are provided for temperature control and broiler burner only operates in the closed position.
Ignition is automatic and occurs as the broiler is closed.
Opening the broiler turns the gas burner off.
Always open the broiler 2 minutes before turning the griddle off at the On-Off toggle switch.
CAUTION
NEVER TURN THE GRIDDLE OFF AT THE ON-OFF POWER SWITCH WHILE THE BROILER
IS IN THE COOKING POSITION. RAISE THE BROILER 2 MINUTES BEFORE TURNING THE
GRIDDLE OFF.
