by a 1/3 compared to a traditional recipe.

HORTENING THE PROVING TIMES
is recommended because the ambient temperature is more optimal
inside than outside the oven I.E. room temperature. Therefore it is necessary to stop the proving
prematurely. Else it will continue and prove too much.
