GAS LEAK TESTING

Prior to lighting your griddle:

1.  Make sure all thermostats are turned all the 
       way down (counterclockwise), and the switches 
       are in the “OFF” position.

2.  Open gas supply to griddle.

3.  Have your plumber or gas company check for 
 

leaks with a soap and water solution or sniffer.  

 

(NEVER check with a fl ame!)

NOTE: 

It is estimated that half of all service calls 

made on Keating MIRACLEAN® Gas griddles result 
from an inadequate gas supply. During installation, 
have a gas company representative make certain that 
the griddle is receiving adequate gas pressure and 
volume.

OPERATING

ORIFICE

1.  Turn off main gas supply valve.

2.  Remove pressure measuring stud screw located 
 

at the “out-fl ow” (closest to gas burner) of the 

 

gas valve and attach a manometer.

3.  Remove cover screw from the gas valve 
 

governor adjustment valve.

4.  Open main gas supply valve and start griddle 

 

according to supplied instructions.

5.  Once griddle is in operation, adjust governor 
 

to the orifi ce pressure for the specifi c gas.

6.  Turn griddle off, close main gas supply valve, 
 

remove manometer, replace cover screw 

 

and tighten cover screw into pressure 

 measuring 

stud.

SPECIAL NOTICES

The griddle should be operated only in an area that 
has good air circulation.

The griddle must be installed under an electrically 
powered ventilating hood.

The operator should be properly trained to the func-
tioning of the griddle.

This instructions manual should be supplied to the 
operator.

Constructional changes to the area where the griddle 
is installed shall not affect the air supply to the 
griddle.

The installation, start-up and changes required when 
changing from one gas type to another can be per-
formed only by a certifi ed professional.

These griddles are intended only for commercial use 
and are to be operated only by professionals.

It is required that the griddle is regularly inspected for 
proper functioning. The frequency of inspections are 
dependent of the griddle usage, however it should be 
performed at least once a year.

NOTE:

 After conversions, readjustments or service 

work the griddle has to be tested for proper function-
ing. Basically the following applies:

Test for gas leaks.

Testing for correct air supply.

Testing of proper combustion and gas supply.

Testing of correct gas supply controls.

Testing the vent system of the installation location.

LIGHTING

1.  Open the manual gas valve.

2.  Turn the Main Power On/Off switch to the “ON” 
 

position to light all of the pilots.

3.  Set each thermostat to desired temperature 
 

for cooking. When the griddle plate reaches 

 

each temperature setting, the burners will 

 

shut off.  

NOTE: 

The pilot will automatically attempt to light 

three times before shut down.

If any of the pilots fail to stay lit, wait fi ve minutes 
before attempting to re-light to allow any accumu-
lated gas to escape.

CONDITIONING THE PLATE

The Miraclean® Griddle plate has been “seasoned” at 
the factory. The chrome surface, when heated, creates 
a thin layer of chrome oxide which acts as a releasing 
agent for food products. If you feel you need to recon-
dition the surface, the following instructions should be 
followed:

2. Heat MIRACLEAN® Griddle to 200°C for one hour.

3. Lower thermostat to 175°C, allowing the 
MIRACLEAN® Griddle to cool to about 175°C, as is 
evident when griddle cycles on or surface thermom-
eter indicates correct temperature.
