Potato Scallop

2 tablespoons (30 ml) all-purpose flour
1 tablespoon (15 ml) butter, diced
1 cup (250 ml) milk

bowl: process potatoes. In a separate bowl, mix salt, flour,
butter, and milk. Microwave on High for 1 minute. Slowly pour milk mixture
over the potatoes. Microwave on High for 10 minutes or until potatoes are
fork tender. Allow to rest for 15 minutes before serving.
Makes 4 servings.
For conventional oven baking:
In a saucepan, melt margarine then stir in
flour, salt, and pepper. Add milk. Cook while stirring over medium heat until
sauce thickens. Layer onion, potatoes, and sauce in glass baking dish. Bake
at 325ºF (160ºC) for 50 to 60 minutes or untill potatoes are tender. Do not use

®
bowl in oven.
Cheesy Potatoes
