Vanilla Sponge Cupcakes
Ingredients:

115g Self Raising Flour
•
100g Butter (room temperature)
•
115g Caster Sugar
•
2
Eggs
•
1 teaspoon Vanilla Essence
•
1 teaspoon Baking Powder
This mixture will make approximately 12-14 Cupcakes with the Cupcake plates.
Instructions:
1. Sift the fl our into an adequate sized bowl.
2. Roughly break the room temperature butter into chunks, add them to the bowl, along
with the sugar, the eggs, vanilla essence and the baking powder.
3. Stir or blend the mixture well until smooth and creamy.
4. We do suggest you add some oil spray, to the Cupcake plates to eliminate the
possibility of sticking (a thin layer of butter/margarine can also be used).
5. Now using a spoon, decant the mixture into the pre-heated Cupcake cavities leaving
space for the mixture to expand.
6. Close the machine and leave for 4-5 minutes and check for browning around the sides
of the cakes. They may need to be left for a further 1-2 minutes. Once you are happy
you can switch off the machine and leave to cool for a few minutes before removing
with a wooden or plastic utensil.
7. Decorate your cakes as desired.
Classic Mini Doughnuts
Ingredients:

230g Self Raising Flour
•
100g Caster Sugar
•
125g Butter (room temperature)
•
1
Egg
•
190ml
Milk
•
1 teaspoon Vanilla Essence
•
1 teaspoon Baking Powder
This mixture will make approximately 18-22 Mini Doughnuts with the Doughnut
plates.
Instructions:
1. Sift the fl our into an adequate sized bowl; add the sugar and baking powder and mix.
2. In a separate bowl add the wet ingredients; the room temperature butter, egg, vanilla
essence and milk. Whisk together well.
3. Next carefully fold in the wet mixture into the dry ingredients and combine together
without over mixing.
4. We do suggest you add some sunfl ower oil spray, to the Doughnut plates to eliminate
the possibility of sticking (a thin layer of butter/margarine can also be used).
5. Now using a piping bag or a spoon, decant the mixture into the pre-heated Doughnut
cavities leaving space for the mixture to expand.
6. Close the machine and leave for 3-4 minutes and check for browning around the
sides of the doughnuts. They may need to be left for a further 1-2 minutes. Once you
are happy you can switch off the machine and leave to cool for a few minutes before
removing with a wooden or plastic utensil.
7. Decorate your doughnuts, or coat them in cinnamon sugar and serve immediately!
