Cumin Slaw
Try this recipe to top off pulled pork or fish tacos!
½ small cabbage,
4 T. lemon juice
¼ large onion
2 t. kosher salt
½ red or green bell pepper,
1 t. ground cumin
4 T. extra virgin olive oil
black pepper, to taste
1. Shred the cabbage, onion and bell pepper with the mandoline.
2. In a large bowl, whisk together all other ingredients to make a dressing.
3. Pour the cabbage mixture into the dressing. Toss to coat well.
4. Let the slaw rest for 10-15 minutes. Stir thoroughly, and serve.
Serves 4-6
Spicy Carrot Salad
1 lb. carrots, shredded
1 T. honey
1 small red onion, minced
1 T. toasted sesame oil
2 cloves garlic, minced
red pepper flakes, to taste
½ c. cilantro, chopped
salt & pepper, to taste
4 T. apple cider vinegar
¼ c. toasted sesame seeds
1. Mix carrots, onion, garlic and cilantro in a large bowl.
2. In a small bowl, whisk together the vinegar, honey and oil to make the
dressing.
3. Pour the dressing over the carrot mixture. Add the pepper flakes, salt &
pepper and sesame seeds. Toss well.
4. Salad should sit for at least 30 minutes at room temperature before
serving.
