Asian Chicken and Broccoli
1 cup water
1" ginger, minced
2 thin skinless chicken breasts
¼ cup soy sauce
salt & pepper
1 Tbsp. rice vinegar
10 oz. canned pineapple chunks in juice
1 tsp. sesame oil
2 cloves garlic, minced
1 head of broccoli florets
1. Wash hands with soap and water. DO NOT rinse raw poultry. To avoid
cross contamination, wash hands and utensils after touching raw poultry.
2. Put the water in the griddle and add the steamer.
3. Sprinkle the chicken with salt and pepper (both sides) and place in the
steamer. Cover and steam for 20 minutes.
4. While the chicken is steaming, heat the pineapple (and juice), garlic,
ginger, soy sauce, vinegar and oil over medium heat in a saucepan on the
stovetop. Stir well.
5. Add the broccoli to the saucepan, cover and cook 3–5 minutes. Remove
from heat.
6. Remove the chicken from the steamer (chicken is done when internal
temperature reaches 165
°
F) and shred with 2 forks. Toss the chicken into
the pineapple mixture and serve hot.
