PIE CRUST MADE QUICK AND EASY
INGREDIENTS:
2 c. flour 1 tsp. salt
2/3 c. shortening 5 Tbsp. ice water
DIRECTIONS
1. Mix flour and salt in food processor using the plastic mixing blade.
2. Add shortening and pulse on 3 until mixture is cut into pea size pieces.
3. While pulsing the food processor, drizzle in a tablespoon of water
at a time, just until the dough forms a ball.
4. Place dough onto flour covered surface.
5. Cut dough in half and using a rolling pin, roll into 2 circles.
Makes one double crust 8” pie or 2-8” pie shells.
HOMEMADE FRESH SALSA & GUACAMOLE
INGREDIENTS:
SALSA:
1 can (14.5 oz) fire roasted tomatoes ¼ c. chopped onion
(well drained) ¼ tsp. coarse (kosher or sea) salt
2 Tbsp. chopped fresh cilantro 1 clove garlic, finely chopped
1 small fresh jalapeño chile, ½ tsp. red pepper sauce
seeded, (finely chopped)
GUACAMOLE:
3 ripe large avocados pitted, peeled 2 Tbsp. fresh lime juice
½ tsp. coarse (kosher or sea) salt ½ tsp. red pepper sauce
1 clove garlic, finely chopped
DIRECTIONS:
1. In processor bowl, finely chop and mix the salsa ingredients.
Put aside in another bowl.
2. Rinse the processor bowl for avocados and using the chopping blade,
coarsely chop the avocados.
3. Add in remaining guacamole ingredients and mix to smooth
consistency.
4. Spoon guacamole into shallow serving bowl; top with salsa.
Serve with tortilla chips as desired.
Serves 4-6.
