holding the portafilter on an angle over the coffee puck container. You should
get an even and smooth surface of the coffee puck in the filter basket.
nOte:
After grinding and tamping, the razor™ tool should always scrape off a little cof-
fee powder, leaving an even and smooth surface. try to adjust the grinding time
accordingly via the GrIND tIMe dial.
4. wipe off any excess coffee powder from the rim of the filter basket and porta-
filter. the portafilter is now ready for extraction.
adjusting the razor™ tool
If you do not know the correct setting for the razor™ tool, you need to adjust the
height of the coffee puck by trial and error until you achieve a gap of approx. 1 mm
between the group head dispersion screen and the surface of the trimmed coffee.
1. start with an amount of coffee powder that is too high and adjust the razor™
tool for a too high setting (e.g. number 4).
2. trim the surface of the coffee puck in the filter basket. then, install the portafilter
at the group head of your espresso machine and, wItHout starting an extrac-
tion, remove the portafilter. the dispersion screen should leave an imprint on the
surface of the trimmed coffee.
3. Adjust the razor™ tool to a somewhat lesser height (lower number).
4. repeat step 2 and 3 until there is no pattern of the dispersion screen on the cof-
fee powder any more.
5. to achieve the desired clearance between coffee powder and dispersion screen,
additionally turn the adjustment dial somewhat lower (by up to half a number).
You will then have the correct height for your espresso machine.
nOte:
After adjusting the razor™ tool, you should adjust the grind size and, in a small
range, the tamping pressure, until you get the desired rate of espresso flow (see:
›selecting the Grind size and Grind Amount‹). However, keep in mind, that the
setting of the razor™ tool must be constant, as this parameter depends only on
the type of espresso machine you use.
grinDing intO a grinDs cOntainer Or cOffee filter
1. If required, remove the portafilter cradle by pulling it out from under the grind
outlet.

2. Place your container or coffee filter directly under the grind outlet.

3. select the required amount of ground coffee by rotating the GrIND tIMe dial.
suggestions on the appropriate settings for various brewing methods are given
in section: ›selecting the Grind size and Grind Amount‹.
4. rotate the bean hopper to adjust the grind size collar until it reaches the required
brewing method range. within the range for each brewing method (espresso,
Percolator, drip, or Press/Plunger), there are several possible grind size settings.
we recommend to start in the centre of each range, then experiment within each
range until you get the flavour balance that suits you.
5. shortly press the stArt/cANcel button to start operation. the grinder will stop
automatically, after the selected grinding time elapsed.
tiPP:
You can pause or cancel operation at any time. simply press the stArt/cANcel
button again. If you need somewhat more coffee powder, hold the stArt/cAN-
cel button pressed until the desired amount is ground (see: ›Properties of Your
New coffee Grinder‹).
