Dehydrating Time
The dehydrating time depends on three factors:
1. The surrounding humidity:
The higher the air humidity in the room, the longer your product will need to dry.
2. The moisture content of the product to be dehydrated:
This is, of course, the most influential factor. Please note that the water content of a type of
fruit or vegetable can vary from case to case. This depends on, for example, how much it
rained during cultivation; environmental factors and the ripeness of the product also play a
role.
3. The type of preparation:
The thinner you cut the fruit or vegetables to be dehydrated, the quicker they dry. Make
sure that all slices are cut to an equal thickness and laid non-overlapping onto the trays in
one single layer.
If you would like to preserve your dried fruit for a longer time, then you must ensure that
as much moisture as possible is removed. Very tasty: zucchini and tomatoes can stay in the
dehydrator until they have the consistency of crisps. They are, however, preserved before
they reach this level of crispiness.
If you take the slices or pieces between two fingers, you will immediately feel if enough
water has been removed (you will learn this quickly). If the surfaces no longer stick to your
fingers and if the skin on the top and bottom can no longer be moved back and forth, then
they are sufficiently dehydrated.
With the removable screen inserts of the trays, the air can completely circulate around the
product. The design of the trays prevents too much moisture from collecting on the bottom
of the dehydrating food, thus allowing your food to dry evenly.
Your Excalibur is equipped with a very practical removable door. Simply lift the door out.
Now you can easily slide the trays in and out on the tracks mounted on the sides of the
enclosure. On the top side of the door, there are two hooks where the door is hung into the
end plate on the top of the Excalibur. Make sure that the door is hanging vertically in the
middle and does not hit the sides on the bottom. This allows the moist air to evenly escape
on both sides.
