Drying Vegetables

Wash vegetables, remove stems and trim areas you deem inedible.

Vegetable can be prepared to your personal preference. For optimal drying, cut or slice vegetable
into uniform pieces.

To prevent food discoloration in vegetables before and after the drying process, there are two
recommended pretreatment options to prevent this natural process.
Steaming:
Steam your vegetables in a steamer, your microwave or over a pot of boiling
water, making sure the vegetables do not make contact with the water.
Blanching:
Submerge vegetables in boiling water.

- Allow vegetables to cool for 30-60 minutes before storing as mentioned on page 3.
- Drying time is all about
personal
taste. Be sure to taste vegetables from each tray before storing to
ensure that the moisture has been removed to your liking.
