Lemon Ricotta Pancakes
DIRECTIONS

n a medium bowl, beat the egg whites until soft peaks form. Add sugar and continue beating
until stiff peaks form. In another bowl, mix the egg yolks, ricotta cheese, flour, melted butter,
salt, and lemon zest until well combined.
Gently fold the whipped egg whites into the pancake mixture. Pour batter into 4” circles on a
pan or griddle. Flip the pancakes once the center starts to bubble and the edges appear firm.
Top with maple syrup and a little lemon zest.
