12-Cup
(1.8 L) Pr
ogrammable Cof

statement about how serious you ar
e about your
cof
fee – and your kitchen. Enjoy the full
pr
ogrammability
, extr
eme ease of use, and

eat tasting cof
fee.
THE QUEST FOR
THE PERFECT CUP
OF COFFEE
It is generally agr
eed that ther
e ar
e four basic
elements critical to the perfect cup:
Element 1: W
ater
Cof
fee is 98% water
. Often overlooked, the
quality of the water is as important as the
quality of the cof
fee. A good rule of thumb is
that if your water doesn’
t taste good fr
om the
tap, it won’
t taste any better in your cof
fee.
That’
s why Cuisinart has added a water filter
to the Cuisinart Classic
12-Cup (1.8 L)
Pr
ogrammable Cof
feemaker
. The char
coal water
filter r
emoves chlorine, calcium, bad tastes and
odours, for the pur
est cup of cof
fee every time.
Element 2: Cof
fee
While the bulk of the liquid is water
, all of the
flavour should be fr
om the cof
fee. T
o
achieve
the same gr
eat quality cup of cof
fee you r
eceive
at a cof
fee bar
, you need to use the same
quality beans. If you choose to grind your own
beans, buy the beans fr
esh and whole, only
about a two-week supply at a time for maximum
fr
eshness. Once the cof
fee bean is br
oken,
its flavour degrades very quickly
. If it is not
practical to buy small supplies, we r
ecommend
you separate lar
ger amounts of beans into
one- to two-week portions immediately
after pur
chasing, and fr
eeze them in airtight
containers. The best way to maximize
fr
eshness is to minimize exposur
e to air
,
light and moistur
e. So, once r
emoved fr
om
the fr
eezer
, beans should be maintained
in a sealed container at r
oom temperatur
e,
since damaging condensation occurs every
time the beans ar
e r
emoved fr
om the fr
eezer
or r
efrigerator
. Note that some cof
fee experts
advise against fr
eezing dark-r
oast beans
because this can cause the oils to coagulate,
while other experts disagr
ee. W
e
suggest you
experiment and decide for yourself.
Element 3: Grind
The grind is critical for pr
oper flavour extraction.
If the grind is too fine, over
extraction and
bitter
ness will r
esult. T
oo fine a grind may also
clog your filter
. If grind is too coarse, the water
will pass thr
ough too quickly and the desir
ed
flavours will not be extracted. W
e
r
ecommend
a medium-fine grind.
Element 4: Pr
oportion
The cups on the Cuisinart
®
cof
feemaker ar
e
5 ounces (148 ml). Add the amount of gr
ound
cof
fee that corr
esponds to the number of cups
being br
ewed. Many cof
fee bars and the
Specialty Cof
fee Association of America
recommend adding 2 r
ounded tablespoons
(30 ml) of cof
fee per 6 ounces (170 ml) of water
.
Some cof
fee manufactur
ers r
ecommend using
1 tablespoon (15 ml) per cup. W
e
r
ecommend
using 1 tablespoon (15 ml) of gr
ound cof
fee per
cup, but use mor
e or less to suit your taste.
NOTE: The maximum capacity for gr
ound
