방법

현미는 백미에 비교해 영양가가 높은 식품입니다. 하지만 먹었을 때 거칠고 딱딱하며, 소화하기 힘들다는
단점을 가지고 있습니다. 그러나 아주 조금만 발아시켜도 잠자고 있던 효소가 활성화되어 영양성분이 보다
풍부하게 되고 소화 흡수가 훨씬 수월한 형태로 변화됩니다.

�쌀 표면이 밝은 황색을 띄고 표면에 윤기가 흐르면 좋은 현미이고

표면이 하얗게 일어나거나 색이 검은 기운을 띄면 발아에 적합하지 않은
현미 입니다.

�조각나거나 덜 여문 현미는 피하시고 쭉정이가 없는 현미를 고르세요. 

쭉정이는 발아 중 썩어 냄새를 유발하고 푸르스름한 색을 띄는 덜 여문 현미는
발아가 되지 않습니다.
