Then bring the selector mode back to the initial position and then turn it left (LIRA cutter) or press 
the 

 switch (LIRA PLUS cutter) on the control panel. The cutting frame runs back until the end 

stroke is reached as automatically signalled by the control system.

Emergency stop 

 
Press the EMERGENCY STOP switch and disconnect the cutter from the mains supply.

Cleaning 

 
The procedure can be seen also on the demonstration CD. 
 
The cutter must be cleaned after every single use, that is at the end of each continuous sequence of 
use,  regardless  of  the  time  it  has  lasted.  In  short,  under  optimum  temperature  and  moisture 
conditions for bacterial growth, all food residues have to be removed within two hours. 
Always disconnect the cutter from the mains supply before cleaning it as described above. 
Use  preferably  a  vacuum  cleaner  to  remove  coarse  particles  from  the  machine  body  and  the 
components. 
Use standard clearing solutions to clean the machine.

Disposal 

 
The  machine  has  to  be  disposed  in  compliance  with  local  waste  management  and  disposal

MAINTENANCE

 

 
Only CHOCOLATE WORLD authorised personnel have to perform maintenance and repair of the 
cutter except for activities described in Section 8.1 below. 
Therefore,  should  you  require  service  or  spare  parts,  please  call  CHOCOLATE  WORLD  at  +39 
0746 491604.

Motherboard removal procedure on LIRA PLUS cutter 

 
With machine standing and off the mains power supply, remove the control panel by unscrewing 
the four screws that hold it down (see Figure

Then remove the motherboard.

Personnel have to be trained based on the instructions given in this manual.
