6.5.2 Thermometer Test Instructions
The use of an accurate meat thermometer for checking food
temperature and a cooking thermometer for checking oil
temperature is highly recommended. The following
procedure will help ensure the accuracy of the thermometer.
To prevent possible food poisoning due to
undercooked meats, always test the cooked food
with a meat thermometer. A thermometer is a
sensitive measuring device which may not work
properly if dropped or otherwise damaged. Make
sure the thermometer is reading accurately before
use. Do not use a meat thermometer for checking
oil temperature.
1. Wearing protective gloves, hold the thermometer by
the dial and insert the thermometer stem into
boiling water.
2. The needle should quickly move to a reading of
212° F (100° C).
3. If the needle stops at a lower temperature, the
thermometer is not working properly. Replace
the thermometer.
Always use a cooking thermometer
to monitor the temperature of
the oil when frying. Do not cook with oil without an
accurate thermometer.
6.5.3 Typical Cooking Guidelines
1. Visually inspect the entire appliance, including
the base, cooking liquid vats, LP cylinder, regulator
hose assembly, hose, and burner assemblies before
each use. Replace any damaged or worn parts.

Note:
Check the fill level of the LP cylinder prior to cooking.
If the level is low, use a new or refilled LP cylinder. Do not
attach a new LP cylinder once cooking has started.
Do not disconnect the regulator
hose assembly or loosen any gas
fitting while the appliance is in operation.
2. Light the burner(s). Refer to section “6.4 Lighting
Instructions” on page 19.
This appliance has an open
flame so be careful of loose
hair and clothing during operation as they could catch
fire. Keep a grease rated fire extinguisher nearby.
3. Place the vat(s) into the base and fill with cooking
liquid. There must be a minimum of three inches
between the cooking liquid level and the top of the vat.
4. Heat the cooking liquid to the desired temperature.
a. Remember that it can take anywhere from 20
minutes to an hour to heat the cooking liquid,
depending on the amount of cooking liquid and
the outside temperature and weather conditions.
b. A typical temperature for deep frying oil is
350° F. However, it can quickly reach its flash
point once this temperature is achieved. Refer
to section “3.7 Cooking Oil or Grease Fires” on
page 8 for additional information.
