carrot, pumpkin and feta flan
Serves 6
8 sheets filo pastry
60g butter, melted
1 leek finely sliced
50ml (9 fl oz) pumpkin pulp
50ml (9 fl oz) carrot pulp
50g feta cheese, crumbled
eggs
1 egg white
60ml (½ fl oz) cup milk
tablespoons orange rind
tablespoons chopped fresh parsley
1 Layer the sheets of pastry, brushing
between each sheet with butter. Put the
pastry into a 5cm flan tin, pressing it
over the base and sides. Trim the pastry
edge 1.5cm higher than side of the tin.
. Combine the leek, pumpkin, carrot, feta
cheese, eggs, egg white, milk, orange
rind and parsley. Pour into the pastry
case and bake at 180°c for 5-0 minutes
or until golden and set.
Rather than waste
the fibre from
the fruit and
vegetables that have
been juiced, these
recipes have been
developed to use
the left over pulp.
