Cold smoking is smoking food at a very low temperature
(max. 25 °C), so the food is not cooked in the process. Cold
smoking is used to flavour and preserve food.

Because the Barbecook Otto is designed for hot smoking,
this manual only includes instructions for hot smoking.
You cannot use the appliance for cold smoking.

ASSEMBLING THE APPLIANCE
5.1 Safety instructions
•
Do not modify the appliance when assembling it. It is very
dangerous and not allowed to alter parts of the appliance.
•
Always follow the assembly instructions carefully.
•
The user is responsible for the correct assembly of the
appliance. Damages caused by improper assembly are not
covered by the warranty.
5.2 To assemble the appliance
You need a cross-slotted screwdriver.

Assemble the appliance as shown on the assembly
drawings.

You find the assembly drawings in the second part of this
manual, after the exploded view of your appliance.

GETTING THE APPLIANCE READY
FOR USE
6.1 Before the first use
Before the first use, you have to burn in the appliance. This
removes any remaining manufacturing greases from the
appliance. Proceed as follows:

Assemble the appliance. See “5 Assembling the appliance”.

Put the appliance in an appropriate location. See “3.3 Select

Check if all parts (heating element, support, chips tray,
grease tray and grid) are in place.

Close the lid and connect the appliance to the mains.

Let the appliance run for 20 minutes. Do not put any wood
chips or food in the appliance.

After 20 minutes, disconnect the appliance from the mains
and let the appliance cool down.
6.2 Before each use
Each time you use the appliance, make sure that:

The appliance is in an appropriate location. See “3.3 Select
•
The feet and handles are still firmly attached. Tighten the
screws if necessary.
•
The chips tray, grease tray and grid are clean. See
“8.1 Cleaning the grid and trays”.

SMOKING FOOD
You need wood chips.
7.1 Which wood chips should I use?
Always use soaked wood chips, never put dry chips in the
appliance. To infuse your food with extra flavour, you can use
flavoured wood chips. Barbecook provides three types of
flavoured chips:
7.2 Step 1: Placing wood chips

Put sufficient soaked wood chips in the chips tray. Never use
dry chips and never put too little chips in the tray.

How many wood chips you need, depends on how long
you need to smoke your food. As a rule of thumb, use a
full hand of chips per quarter smoking time.

Put the chips tray on the support above the heating element.
Never put the tray directly onto the heating element.
7.3 Step 2: Placing food

Put the grid on the grease tray.

Put your food on the grid.

Only put a single layer of food on the grid and leave
enough space between the pieces of food. This allows the
smoke and heat to circulate evenly around the food.

Never put tinfoil on the grid or in the grease tray. This
causes excessive heat and can damage the appliance.

Slide the grease tray with the grid in the appliance, on the
support brackets.

Close the lid.
7.4 Step 3: Preparing food

Connect the appliance to the mains.

Let the appliance run until the food is ready. The cooking
time depends on the type of food and on the weather
conditions.

Once you have started smoking, avoid opening the lid as
much as possible. A considerable amount of heat and
smoke escapes each time you open the lid, which
extends the cooking time of your food.

Disconnect the appliance from the mains.

Open the lid, take out the grease tray with the grid and enjoy
your food.

Clean the appliance. We recommend cleaning the grid and
the grease tray while they are still slightly hot.

MAINTAINING THE APPLIANCE

Always disconnect the appliance from the mains before
you execute any maintenance tasks.
8.1 Cleaning the grid and trays
Clean the grid, the grease tray and the chips tray after each use:
•
Clean the grid and the grease tray while they are still slightly
hot. This eases the cleaning.
•
Clean the chips tray when it has cooled down completely.
Always pour the used wood chips into a heat resistant
container.
