5.2 Operating
•
Fill the interior of the pan with food to be cooked. Fill up to the desired water quantity by swivelling the
water inlet and operating the lever for hot and cold water. Set power controller (14; 7) to position 3. Put
cooking setting switch (13; 8) to position 2. Green light shows operational readiness and yellow shows
that heating is taking place.
•
When the cooking temperature is reached, put the cooking setting switch (13; 8) back to position 1
(simmering). The amount of heat can be continuously regulated between positions 1 and 3 using the
power controller (7) .
The boiling pan works at full power if not switched down to the simmering level. There is therefore a
danger of overcooking!
•
Drain off the cooked food in the pan via the safety discharge valve by raising the handle through 90°
and opening by rotating the valve.
•
If a discharge strainer is fitted, the discharge of solid foodstuffs is prevented.
•
If the equipment is to be taken out of use, set all knobs to “zero”.
Safety discharge valve (Figure 6)
•
The closed position is marked on the left side by a vertically hanging handle. The “open position” is
indicated by the horizontally positioned handle.
•
To open, the handle is raised, brought into the horizontal position and turned to the right to the end
stop position.
•
To remove the valve plug, press in the push button while in this “open position” and pull out the plug
(L)
upwards. Do not remove the plug till the pan has been completely emptied.
•
The inadvertent removal of the plug is prevented by a push button safeguard
(K)
on the folding handle
of the discharge valve. The plug can only be removed when in the “open position”.
•
When opening the valve, do not put you hands into the push-through opening!
5.3 Cleaning
Please observe the hygiene regulations in your firm! The instructions in this document are not a substitute
for such regulations. (Observe the tips for the treatment of stainless steel appliances in commercial
kitchens!)
Attention!
Appliances may not be cleaned using water under pressure (spraying with water hose or
steam jet or high pressure cleaners). The appliance is to be shut off if the surroundings are to be cleaned
using such means!
The appliance must be shut off and adequately cooled down before cleaning. Appliance parts or
accessories that come in contact with foodstuffs must be cleaned thoroughly with cleaning agents and
then rinsed off with tap water. Flammable liquids are not be used for cleaning.
To avoid interruptions in operation and for hygiene reasons, the appliance should be cleaned daily after
use.
Boiling pan
Empty and clean the boiling pan each time after using it. Cleaning with a soft brush, hot water and a fat
solvent is sufficient in most cases. Rinse out with tap water and rub dry. Remains of food and salt may
not be left to dry in on the pan (danger of corrosion!)
Do not use abrasive materials, sharp objects or harsh cleaning agents

Top plate
With stubborn dirt, spray a commercially available stainless steel cleaning agent

onto the top plate and
let it take effect for about 10 to 20 minutes. Then clean with a coarse sponge and wipe out with clear
water. Do not flood the top plate – wipe it out with cloths.
Safety discharge valve (Figure 7/8)

The val ves a re to be c le aned after e ve ry c ook ing operation. Do not m i x-u p or
c onfus e plug and hous in g.
The drain valve is fitted with a push-through opening. When the plug has been taken out, the housing and
the connecting nozzles can be cleaned with a brush through this opening.
Use only non-scouring cleaning agents for the surfaces. Rubbing down with a soft, clean cloth is often
sufficient. Water with the addition of a commercially available washing-up liquid, or first with undiluted
detergent and then rinsing with plenty of water, is usually adequate.
Lightly lubricate the valve plug with special valve grease after each cleaning operation (see spare parts
list).
When cleaning several valves at the same time, do not mix up the plugs.
