The Geoffrey Zakarian 6 QT Flavor Infusion Pot is specially designed to seal in flavor while cooking.
The Flavor Infusion Lid acts as a low pressure lid, reaching up to 1 PSI (pounds per square inch) in
pressure. 1 PSI works to keep flavor inside the food while providing an even cook.
You can use the Flavor Infusion Pot with the Flavor Infusion Lid or with the included regular Glass
Lid. Using the Flavor Infusion Lid will result in exceptionally tender meats and vegetables for
delicious meals.
You can also use the Flavor Infusion Pot with the included Glass Lid for regular cooking.
The Flavor Infusion Pot is similar to a Dutch Oven and delivers superior home-cooked results.
The Flavor Infusion Pot can be used either on the stovetop or in the oven. Maximum stovetop
temperature is 500°F, and maximum temperature inside the oven is 300°F.
1. Place your food inside the non-stick cast iron pot. To cook with additional pressure, use the
Flavor Infusion Lid.
2. Place the Flavor Infusion Lid on the pot. Push the Locking Handles in towards the body of the
pot to seal the Flavor Infusion Lid in place.
3. The Pressure Valve regulates pressure automatically during cooking.

It is normal for liquid or condensation to gather around the pressure valve
4. When you are done cooking, remove the Flavor Infusion Pot from the heat source and allow to
cool. Because the pressure is low, at any point you can unlock the Locking Handles and open
the lid to check doneness.
1. When using the Glass Lid, cook as if you were using a regular cast iron pot.
IMPORTANT:
DO NOT lock the Glass Lid on to the Flavor Infusion Pot using the
Locking Handles. There is no way for increased pressure to escape during cooking and it
may damage the Glass Lid.
2. When cooking time has elapsed, remove the Flavor Infusion Pot from the oven or stovetop and
place on a trivet to cool. Make sure to use kitchen gloves, as the Flavor Infusion Pot will be hot.
