5. USER’S INSTRUCTIONS FOR USE AND MAINTENANCE
It is recommended that the instruction, use and maintenance manual be carefully read before using the griddle.
5.1. INSTRUCTIONS PRIOR TO USE AND MAINTENANCE
•
This equipment is solely for professional use and must be utilized by qualified personnel.
•
To perform maintenance, cleaning or repair the gas should be turned off.
•
The modification, removal or lack of maintenance of any part of the equipment raises the risk of accidents.
•
It is recommended that periodic checks be performed, in accordance with current regulations in the country in which
the equipment is to be installed.
•
The manufacturer holds no responsibility for damage from the use of the machine with any modification, removal,
lack of component maintenance performed without prior and express authorization by the manufacturer.
•
Parts that have been modified by the manufacturer or its agent MUST NOT be modified by the installer or user.
• ATTENTION: DO NOT TOUCH THE EXTERNAL PARTS OF THE GRILL GRIDDLE WHEN IN USE AS
THERE IS SCALDING RISK.
5.2. ON AND OFF OPERATIONS OF EQUIPMENT

5.3. CLEANING, CARE AND MAINTENANCE OPERATIONS
CLEANING
Daily care and cleaning at the end of the work guarantees impeccable operation and long equipment life. Appropriate care
of the griddles and accessories fundamental, as the equipment is manufactured with the highest quality materials, able to be
cared for with easily acquired products.
There are two forms of cleaning: one, partial or daily; two, total or weekly. In general, abrasive detergents should not be used
for these tasks, with a large variety of products on the market that dissolve grease and other organic materials without dama-
ging the equipment structure. NEVER CLEAN WATER AT HIGH PRESSURE. The griddles are designed to be easily disas-
sembled and accessible for their care and cleaning.
BURNERS
At least once a week we will unscrew the four nuts that hold the griddle and we will take them out. We find the burners hou-
sed beneath the griddle. We will brush the top of them to remove any residue blocking the gas output orifices. Next, and after
making sure that the burners have been properly cleaned, we will put the griddle to its initial location.
Also make sure that the Venturi nozzles are completely cleaned, as well as the air input and the gas escape. Clean their surfaces.
STAINLESS STEEL SURFACES
The models of the griddles are constructed of stainless steel, a material of excellent quality and durability. Maintaining it with
appropriate detergent, a daily cleaning of these parts will keep it in perfect condition.
UPPER GRIDDLE
It is important that the griddle surface is always clean of solid residues, even during its use.To do so, the surface should be
covered with any type of comestible and lubricating substance at work temperature (comestible oils, greases, butters, etc). The
existence of the collector allows said residues to be temporarily deposited inside, thus facilitating the use of the griddle under
perfect conditions. As it finishes the operations it is advised passing a rag with oil to keep it covered of oil in perfect state and
like this avoiding the oxide.
At least once a month, the griddle and collector should be cleaned using a non-abrasive grease remover.
