Date and Orange Muffins
2 cups flour
3 teaspoons baking powder
1/4 cup sugar
1 cup chopped dates
1/4 cup butter, melted
1 tablespoon vanilla extract
2 eggs
1 teaspoon grated orange rind
1/4 cup orange juice
1-1/2 cups natural yogurt
Sift flour and baking powder together into a bowl. Stir in sugar
and dates. Make a well in the center of the dry ingredients.
Lightly beat the eggs, orange rind and juice together. Pour
butter, vanilla extract, egg mixture, and yogurt into the well of
the dry ingredients. Mix until just combined. Spray muffin pans
with non-stick spray. Place 1/4 cup batter into each muffin.
Bake in a preheated 350°F oven for 15 minutes, or until golden
brown and cooked through.
Yield: 16 muffins
