Tuna Fish Filling
“Perico” (Egg Filling)
Cooking Instructions:
Lightly fry all vegetables, seasoning with salt, Worcester sauce and cumin. Combine
the tuna and mix with the vegetables. Simmer for 3 minutes. Fill the arepas and
serve.

Lightly fry the onions, add tomato and salt. Cook for 2 or 3 minutes. Separate the egg
whites and beat. Mix the egg whites with the egg yolk and combine with onions and
tomatoes. Add milk and cook. The egg should be runny. Fill the arepas and serve.

1 Can of Tuna
1 Teaspoon of Salt
1/2 Teaspoon of Cumin
1/2 Cup of Mixed Onion, Red Pepper
and Tomato, finely minced
1/2 Teaspoon of Worcester Sauce
2 Teaspoons of Oil
