III.

The Oven Motor cuts out or will not restart when the Oven is hot:

The Oven Motor should be running at all times whenever the Oven is being used. Using the 
Oven without the Oven Motor running will cause damage to the components found in your 
Oven!
A. If  your  Oven is fitted with a Motor Reversing  Switch make sure the  Switch is set to 

either the 

HI

 or 

LO

 position.

B. Check the wiring connections from the Power Switch or Motor Reversing Switch to the 

Oven Motor. All connections must be clean and tight.

C. The Motor on the UB–12R is thermally protected and will shut itself down if it becomes 

overheated.  Check  the  top  of  the  Oven  for  loose  or  missing  insulation,  or 
malfunctioning  Cooling  Fans.  Replace  any  missing  insulation  or  Cooling  Fan  as 
necessary. Any Motor that continues to overheat should be replaced.

IV.

The Oven Blower Wheel makes noise:

A. Remove the Oven Element Cover by removing the three thumbscrews on each side. Pull 

it toward you as it drops down. Check to see that the Oven Blower Wheel is not rubbing 
on the ceiling of the Oven or on the inside of the Element Cover. The Blower Wheel 
position  on  the  Motor  Shaft  can  be  adjusted  by  loosening  the  allen  set  screws  and 
moving the Blower Wheel up or down on the Oven Motor shaft as necessary. 

B. If there is no evidence of rubbing either on the Element Cover or the Oven ceiling the 

Blower Wheel may be loose on the Oven Motor shaft. Re-torque the Blower Wheel set 
screws to 175 inch/pounds.

V.

You have an uneven bake:

A. Check  the  Oven Heating Elements in each side for proper operation (refer to II-B on 

page 19).

B. Be sure the Oven Door Gasket is tight on all sides with no gaps. Use a small scrap of 

paper closed in the Door to test the Gasket fit.

C. If you still get a bad or uneven bake after checking all of the above, please call NU–

VU®'s Service Department at (800) 338-9886 for assistance.

VI.

One or more Indicator Lights do not go on:

The Indicator lights tell when a system or control is activated. Failure of the Indicator Light 
itself will not affect the over-all operation of your unit.
A. Make sure all electrical connections are clean and tight.
B. Check the associated control to see if it functions correctly. If the control functions but 

the  Indicator  Light  does  not  light  up  the  Indicator  Light  itself  is  bad  and  should  be 
replaced.

VII. The Oven Timer does not run:

Your  UB–12R  is  equipped  with  either  one  60–Minute  Timer  and  interconnected  Buzzer 
Alarm,  a  60  Minute  EXTERNAL  STEAM  Timer  or  with  a  24–Hour  Timer  if  the  unit  is 
equipped with  the  COOK–N–HOLD  option.  These  Timers  are  electro-mechanical  devices 
which count down to "

0

" from the initial time setting.

If any Timer does not function correctly:
A. Check  the  electrical  connections between the Oven Power Switch and the Timer. All 

connections must be clean and tight.
