Salt cod brandade

Ingredients
1000 g dried cod
250 ml milk
600-700 ml olive oil
Salt
Pepper
Method
Soak the dried cod in fresh water for 24
hours, changing the water frequently.
Cut into large chunks, and simmer in a
pan of boiling water for 8 minutes.
Remove the fish, drain and leave to
cool. Skin and fillet the fish, remove any
bones.
Heat 200 ml olive oil in a flat,
heavy-bottomed dish. Add the fish and
cook over a low heat, stirring with a
wooden spoon.
When the oil and the fish are thoroughly
mixed, remove from the heat, and
slowly add 400-500 ml olive oil and 250
ml boiling milk alternately. Season with
salt and pepper. The mixture should be
nice and soft.
Transfer the mixture (brandade) into an
oven-proof dish, and place in the oven.
