. The water inlets (Fig.1 Pos. A) must be connected to the
diluted feeding system at a max. temperature of 50°C through
shut-off cocks, to be closed when the equipment is not working
or during maintenance operations.
Water is used for steam condensation in the discharge of black
water, for feeding the humidifier, for steam generation and for
cooling the electronic board and the electric components;
between the shut-off valve and the oven connection pipe, there
must be a mechanical filter so as to prevent any ferrous waste
getting
inside that could over time cause oxidation of the oven.
If the hardness of the water is greater than
5-7°Fr
, it is necessary
to install a softener with automatic regeneration, to be
positioned after the mechanical filter.
As regards the flow rate per hour of the softener, refer to the
Table I.
The oven does not work without the water connection.

WASTE WATER OUTLET
The water discharge (Fig.2 Pos. A) must be conveyed to a drain-
trap (Fig. 1.2 Pos. B) according to the local sanitary standards
in force.
The discharge duct must be made of materials resistant to 100°C
temperature.
For 20-pan models we recommend placing an open relief pipe
(Fig.2 Pos. C) between the water discharge coming from the
oven and the drain-trap, ca. 1 meter in height, in such a way as
to foster the water down flow.
It is not required for 6 and 10-pan models since the pipe is
inside the oven.
The oven is designed to direct the discharge of the black water
on the left side and on the rear (Fig.2 Pos. D).
