SMOKE CANDLE TEST (UNITED STATES AND CANADA)
The smoke candle test is used to test the oven’s ventilation system. The ventilation system should capture all of
the smoke produced by the smoke candle. The test must be performed by a qualified service person as part of
the start-up. The test should also be performed as part of the annual maintenance checkout, or whenever
ventilation problems are suspected. Smoke candles are available from your local Authorized Service Agency.
In order to perform the test, the oven and ventilation system must be fully operational. The test should be
performed on the lower deck of a double deck installation. The test must be performed with a smoke candle
rated at less than
1000 CFM
with duration of
30 seconds.
The candle must operate in
500° F (260° C)
temperatures. The oven must be operating at a temperature of
500° F (260° C
) with the conveyor turned
OFF
.
The ventilation system (including make-up air) must be turned
ON.
Place the smoke candle on a
solid pan, light the fuse, and slide the pan on the bottom conveyor to the center of
the oven. Note the smoke pattern coming from the conveyor openings. The ventilation system must capture at
least
80%
of the smoke from the oven.
If the ventilation system fails to capture at least 80% of the smoke,
DO NOT
operate the unit(s) until the
ventilation system has been adjusted to pass the test. Serious injury can result from the build-up of non-vented
combustion gases.
