12 Prophylactic descaling
A regular descaling of the machine is recommended to avoid strong calcification and expensive repairing. While
descaling, always take into account the hardness degree of the water. It is very important to use a sparing descaler
which does not affect the metal. At your specialised dealer, you can purchase a descaler (in powder or tablet form)
which is perfectly suited for your machine. Just fill the water tank with fresh water and dissolve the descaler in it.
Then proceed as follows:

Heat up the machine until the operative pressure has been reached.

Switch off the machine.

Empty the boiler, operating the hot water dispensing. Discharge the heat exchanger, operating the group lever.
Then close the hot water dispenser and finish coffee dispensing.

Dissolve the descaler in water according to the instructions for use (see above) and pour the solution into the
water tank.

Switch on the machine. Thus, the empty boiler will be filled automatically. Afterwards, operate the group lever
until liquid is discharged by the group. The heat exchanger will fill with the descaler solution.

Place the filter holder with the blind filter into the housing of the group and operate the group lever 3 times for
about 20 seconds. Move the lever into the lower position after every operation. Thus, the expansion valve will be
descaled.

After this process, let the descaler react for approx.
½ hour

Release the remaining descaler solution by operating the group lever.

Switch off the machine and empty the boiler by operating the hot water dispenser. (It is recommended to
unscrew and remove the nozzle of the hot water dispenser so that no dirt can be accumulated inside the nozzle.)

Pour fresh water in the water tank.

Switch on the machine. The boiler refills automatically with fresh water.

Refill water in the water tank.

Operate the group lever for 3 times. Move the lever into the lower position after every operation. Thus, the
expansion valve will be rinsed.
Then remove the blind filter from the filter holder.

Operate the group lever for approx. 60 seconds in order to rinse the heat exchanger.

Repeat point 9 – 11 three to five times in order to rinse the boiler.
Important:
These descaling instructions are only meant for prophylactic descaling. Please do not descale the machine
if it is already calcified. While descaling the machine, the lime residues can plug several components, like valves, gauges
etc., causing damage to your espresso coffee machine. In this case, please contact your specialised dealer. It is probable
that a professional descaling has to be carried out which requires the disassembling of boiler and tubing.
Damage to persons or to the material, caused by calcification in and at your machine, is not subject to the producer’s
liability.
In this case, also the warranty expires. Machines will be only accepted for repair after foregoing technical advice and
written acknowledgement.
13 Coffee terminology
Espresso
Espresso is the typical Italian “national beverage“. To enjoy espresso at its best, serve it in a small cup.
With a coffee amount of approx. 25/30 ml, it is famous for its full body and delicate aroma.
On top of the espresso is a wonderful “crema“, which is only slowly pervaded by the sugar. The crema is not
comparable to milk froth, as it consists of finest coffee oils and flavouring agents, which form on the coffee surface
during the brewing process.
The brewing time is short (approx. 20-25 seconds). The best coffee extraction (using constant pressure) and the right
temperature assure a perfect flavour result in your cup.
Café Crème
In German-speaking countries the Café Crème is also called “Schümlikaffee” and it is served in normal-sized coffee
cups. The required coffee amount is approx. 125 ml. The Café Crème is characterised by a full aroma, body and
crema. (The crema of the Café Crème is usually a bit thinner and brighter than espresso crema.) Alike espresso, each
cup of Café Crème should be prepared singly to achieve the best flavour result.
The preparation time of Café Crème depends on the grinding degree of the coffee. (Usually, preparation time is
approx. 35 seconds.)
