Chicken and Pineapple Kabobs
1 large sweet onion, cut into chunks
½–1 lb. skinless boneless chicken breast or thighs, cut into 1

1 can (20 oz.) pineapple chunks in juice, drained (retain the juice)

barbeque sauce
1. Assemble the kabobs by layering pieces of the onion, chicken and
pineapple onto the skewers.
2. Marinate the kabobs in the pineapple juice for 30 minutes.
3. Preheat the grill plate over medium-high heat.
4. Cook the kabobs, turning every 3 minutes, until the internal temperature
of the chicken is 165°F. Salt & pepper to taste.
5. Serve with your favorite barbeque sauce.
