Egg
Eggs can be used to improve the texture of the bread. Always whisk the
egg thoroughly before adding it to the baking pan.
Butter and oils
Butter and oils are added to make the bread softer and will improve the
shelf life of the bread. Always allow the butter to reach room temperature
and chop into small pieces before adding to the baking pan.
Baking powder/soda
Baking powder and soda are used as raising agents in cakes. Bicarbonate
of soda is also used as a raising agent for soda bread.
Water and other liquids
Ensure the water is between 20ºC and 25ºC before adding it to the
baking pan. Hot water will kill the yeast. You can replace the water with
milk or mix the milk and water together. The milk will improve the flavour
and enhance the crust. Some breads use liquids such as apple, orange or
lemon juice to enhance the flavour of the bread.
Measuring the ingredients
It is very important that you carefully measure the ingredients you are
going to use to make your bread. We strongly suggest that you use
the measuring cup and spoon provided to ensure you use the correct
amount.
Liquid ingredients
Water or fresh milk should be measured using the measuring cup. Check
the level of the liquid in the measuring cup by holding up in line with your
eyes and ensure the cup is not tilted. If you have measured oil or similar
ingredients, clean the measuring cup thoroughly.
Dry ingredients
Weigh the dry ingredients on an accurate set of scales that have been
zeroed when you place the dish on them. Use the measuring spoon for
smaller amounts of dry ingredients.
