Frying sensor function
The triple size cooking zone features a frying
sensor function. The frying sensor controls the
temperature of the pan. The heating element only
heats up when necessary. This is an energy-saving
feature. Oil and fat will not overheat.
The frying sensor can only be used with the middle
combination (ø 8 inches / 21 cm). The middle
combination is activated automatically when
switching on the frying sensor.
Important notes
WHEN COOKING WITH THE FRYING SENSOR
SYSTEM OBSERVE THE FOLLOWING:

Always use pans of the appropriate size
(∅ 8–9 inches / ∅ 21–23 cm) and type.
Unsuitable pans:
– enamel steel pans
– cast iron pans
– pans with a weight under 2 lbs (800 g)
– pans with uneven bottom

Always put the pan in the center of the
heating element
•
Do not place a lid on the pan
•
Never leave frying fat unattended
•
Do not place a lid on the pan. The frying
sensor will not work if you do. You can use
a mesh splatter guard.

Use the frying level min when using olive
oil. When using oil or fat that is suitable for
frying at high temperatures (e.g. refined
plant oil or concentrated butter) you can
use all frying levels.
Frying sensor pan
A specially adapted frying pan for the frying sensor
is available from your specialist dealer or through
www.gaggenau.com
The frying levels provided in the frying table are
designed for the frying sensor pan. The frying
sensor might also work with pans you already own.
First test the pan at low frying levels and then
adjust the level if necessary. The pan may overheat
at higher frying levels.
Frying levels
You can choose four frying levels depending on the
food to be prepared:
min low
temperature
(for example omelets, onions)
med
low-medium temperature
(thick pan fried foods such as
meatballs, sausages and fish)
med plus medium-high temperature
(thin pan fried foods such as cutlets,
breaded frozen products, meat or
vegetable stir fry)
max high
temperature
(for example potato pancakes,
pan-fried potatoes, beef steaks,
rare)
