1. generally, lower temperatures give better quality, more digestible products,
the oven is not subject to excessive thermal stress and so lasts longer, but
longer baking times are required.
2. with higher temperatures it is more difficult to obtain uniform baking, but it
naturally takes less time.
3. the oven has a maximum production capacity
roughly
expressed in terms
of Kg of product per hour. If this maximum capacity is exceeded, the
temperature of the oven decreases, by up to 10-20°C and does not return
to usable levels until products batches are baked at longer intervals or
baking times are increased.
8.3 IF THE OVEN IS USED LITTLE
If there are no products to bake, but the oven is to be kept on stand-by, it is
advisable to set the Minimum/Maximum switch
to Minimum (
indicator on). Doing so, especially if the set temperature
exceeds 300°C,
oven temperature will most probably drop slightly, even if this happens very
slowly. This is not a problem, because by switching to Maximum the oven
returns to set temperature in just a few minutes, ready for a new batch of
products.
8.4 SWITCHING THE OVEN OFF
If the oven is to be left idle for longer periods (until the next day, for
example), the
and
switches must be switched OFF, and the gas
supply valve closed.
For very long idle periods (holidays, for example), the general switch
should also be switched OFF.
