The difference between the ESO and Claris
™
systems
•
The ESO and Claris have many similarities and provide
excellent scale prevention for equipment, along with taste
and odor for beverages. Both feature a weak acid resin
(WAC) that provides an ion exchange (softening) process
that targets carbonate hardness and reduces alkalinity,
disrupting the scaling process. In addition, both have
integrated filter membranes for removing particulate,
along with carbon (GAC for the ESO, carbon block for
the Claris) for reducing chemicals such as chlorine.

There are some differences, the key one being how
blending is handled. The blending of filtered water with
the softened water within the systems provides two
benefits: the mineral in the filtered water acts as a buffer
that prevents the water from becoming too acidic, and
it also provides mineral for taste. In the case of coffee
and espresso, too little mineral would lead to under-
extraction of the coffee grounds and weak flavor and
aroma. The ESO has a fixed blend. Typically about 20%
of the filtered water is blended with the softened water.
The Claris on the other hand has an adjustable blend.
This allows customization of how much mineral you
want in the product water, giving you more control of
the final beverage.

Both systems are excellent solutions for preventing scale
and providing great tasting coffees and espressos. Which
one you use depends on how much flexibility you want
on the water recipe.
