Set up the SousVide Supreme for use.
Insert the wire lifting handle and convection plate as shown, and add water at least to the
FILL mark. Insert the electrical cord (power lead) into the power port on the back of the machine
and plug it into the wall socket. A half-second tone will sound.
Touch On/Off for three seconds
. A two-tone alert will sound when the machine
powers on. The touch controls will illuminate so the cooking cycle can be programmed in
a few simple steps:
1. Set the delayed-start timer
(see page 8). This is an optional function.
Commencement of the heating process may be delayed for up to eight hours. This ensures the
appliance will be ready to cook when you are, whether that’s breakfast time or after a day’s work.
2. Set the temperature
(see page 6).
3. Set the timer
(see page 7). This is an optional function.
The timer alerts the user when the programmed cooking time has elapsed. It does not power off
the appliance when the time has elapsed.
Once the water has reached target temperature, drop food in to cook.
4. Season and vacuum seal food in cooking pouches.
5. Use the pouch rack to separate food portions.
The rack can be positioned so the pouches fit vertically (as shown) or horizontally. Position large
pouches vertically in the rack for best convection circulation of water. Be sure the food in all
pouches is completely under the water surface for cooking.
6. Serve

When the cooking time has elapsed, the food can be served, or held at temperature until you’re
ready to eat. Plate it directly from the pouch, or give it a quick sear or a few moments under the
broiler or on the grill to caramelize and create a crisp exterior. Or serve it with your favorite sauce.

Note: Raw or unpasteurized food must never be served to highly susceptible, immune-
compromised individuals. The US Food Code recommends that for safety, foods should not be
kept between 41F/5C and 130F/54.4C for longer than four hours.
