Recipes

Berry Fruit Roll

Ingredients

•  3 cups fresh or thawed frozen berries
•  2-3 tbsp. honey or sugar
•  2 tbsp. lemon juice

Method

1. Use solid dry tray or cut a piece of

baking paper to size of drying tray.

2. Blend all ingredients together until

puréed and pour a thin layer over the

baking paper.

3. Set unit on 60°C for 7-9 hours,

checking occasionally to see if fully

dried.

4. Carefully peel away and cut into rolls.

Store in the fridge.

Note: Trial with any in-season fruit like

mango or peaches.

Chocolate Covered Oranges

Ingredients

•  5 oranges
•  100g 70% cocoa chocolate
•  1 tsp. sea salt

Method

1. Wash oranges thoroughly. Cut

oranges into 3-5mm slices. Set unit to

60°C and dry for 8-12 hours, or until

pliable and chewy.

2. Break chocolate into small uniform

pieces and melt over a low heat water

bath, stirring constantly.

3. Dip each dried orange slice in the

melted chocolate and transfer to a

baking sheet. Sprinkle with sea salt

while the chocolate is still liquid. Once

cooled and chocolate has hardened,

store in air-tight container at room

temperature.

Note: This recipe also works fantastically

with dried figs. Experiment with your

favourite seasonal fruits.
