Transfer the chicken to the prepared baking sheet, shaking off any excess
marinade. Bake on the center rack for 15-18 minutes, depending on the thickness
of your chicken thighs. The chicken will be almost cooked through. Remove the
chicken from the oven, then preheat the broiler. As the broiler preheats, use your
Turbo Hand Mixer on a low setting to shred your cooked chicken and transfer it
back onto the baking sheet. Place the sheet under the broiler for 4-5 minutes,
turning the pan halfway through, until the chicken shawarma is browned
& caramelized.

Add a large spoonful of hummus to the bottom of a large shallow bowl, spreading
it across the bottom of the bowl. Add in the quinoa and chicken shawarma, then
finish with your favorite toppings. Serve immediately.
Chef’s Tip:
For toppings, try freshly sliced cucumbers, shredded cabbage, olive
oil, lemon wedges, sliced basil, pickled red onions or pita bread.
