1 ½ cups bell pepper strips
1 cup sliced onion
½ lb boneless chicken breasts
1 tsp chili powder
½ tsp ground cumin
3 whole tomatoes, chopped
4 whole wheat tortillas, 6”
1 tsp olive oil
½ lb medium shrimp
3-4 cloves garlic, sliced
salt
½ lemon, juiced
2 tbsp extra virgin olive oil, divided
Directions:
1.
Plug in your Express Pocket & Omelette Maker. Using both Cooking Surfaces,
sauté the bell peppers and onion with the olive oil until tender. Remove the
peppers and onion from the Cooking Surfaces using a heat-resistant nylon or
silicone cooking utensil.
2.
Add the chicken to the Cooking Surfaces and sprinkle with the chili powder
and cumin. Close the Cover and cook until the chicken is done.
3.
Open the Cover and return the peppers and onion back to the Cooking
Surfaces. Add the tomatoes and sauté until hot. Divide the fajita mixture among
the tortillas.
Directions:
1.
Plug in your Express Pocket & Omelette Maker. Pour one tbsp of olive oil on each
Cooking Surface. Let warm until hot but not smoking.
2.
Add the shrimp and garlic cloves, dividing between the Cooking Surfaces.
Season with salt.
3.
Cook the shrimp with the Cover down until they turn pink and the shells are
golden and charred. Squeeze the lemon juice over the shrimp, then serve.
