Banana and Pecan Waffles
Makes 10
300g plain flour
50g granulated sugar
2 tsp baking powder
1 tsp baking soda
½ tsp salt
2 eggs, lightly beaten
90ml vegetable oil
220g low fat plain yoghurt
170ml full fat milk
2 whole bananas, peeled and mashed
100g chopped pecan nuts

Combine flour, sugar, baking powder, baking soda and salt in a mixing
bowl and stir together.

In a separate bowl whisk together the eggs and oil and stir into the dry
ingredients. Stir in the yoghurt. Add the milk and stir until the mixture
is a smooth batter. Stir in the banana and nuts until just combined and
leave to rest for 5 minutes, this is very important.

Switch the Waffle Maker on and close the lid.

Once the green light is illuminated pour a ladleful (approx. 90ml) into
the centre of each grid.

Close the lid and lock the handle.
n
When the waffles are baked to your liking, carefully open the lid and
remove from the waffle maker.
n
Serve topped with warm maple syrup.
