Sweet Red Pepper Coulis
1 tbsp olive oil
1 medium onion, peeled, roughly chopped
6 cloves garlic, peeled and smashed
3 medium peppers (approx 175g each), roughly chopped
Pinch salt
Ground pepper
1 sprig of fresh thyme
55ml dry white wine
55ml chicken stock

Heat the olive oil in a medium saucepan over medium-low heat. Add the onion, garlic, red
pepper, salt, pepper and thyme, and stir to coat. Reduce heat to low, cover loosely and cook until
vegetables are softened, but not browned, approximately 15 to 20 minutes.

When vegetables are soft, add wine. Raise the temperature so that the wine comes to a boil.
Reduce the wine, leaving approximately 1 tbsp. Add stock and bring to a boil.

Reduce heat to medium-low and simmer for approximately 10 minutes. Insert the hand
blender into the saucepan, ensuring the protective anti-splash guard is submerged. Blend, using
an up-and-down motion until ingredients are smooth and well combined, approximately 30 to
45 seconds.
