Classic Meatballs
1 medium onion, quartered
15g parsley leaves
2 slices day old fi rm bread, torn into pieces
450g braising steak, cut into 2.5cm pieces
450g boneless pork, cut into 2.5cm pieces
40g skimmed milk powder
1 ½ tsp salt
½ tsp ground nutmeg
¼ tsp dried thyme
2 large eggs
60ml cold water
Insert the large metal chopping blade into the large work bowl.
Add the onion, parsley, bread, meat, powdered milk and spices to the work bowl. Replace
the lid and pulse 4 to 6 times and then process until fi nely chopped.
Open the lid, add the eggs and water then replace lid and pulse until just combined.
Shape the mixture into balls, 2 tablespoons each.
Arrange them in a single layer in a baking dish and bake at 190ºC/375ºF for 25 minutes
or simmer in tomato sauce until cooked through.
