Roasted Garlic
&
Red Pepper Dip
Serves 4
1 ½ large bulbs garlic, cloves peeled
1 tsp extra virgin olive oil
2 spring onions, cut into 2.5cm pieces
75g roasted red peppers
Freshly ground black pepper
Preheat oven to 190ºC/375ºF, Gas Mark 5.
Toss garlic cloves in the oil and wrap in foil. Place in the centre of the oven and roast
for 1 hour. Remove from oven and leave to cool.
Insert the large metal chopping blade into the medium work bowl. Add the cooled garlic
and process until puréed.
Scrape the work bowl, add the remaining ingredients and process until smooth. Chill for
1 hour and serve with crudités or breadsticks.
